So, Tuesday was supposed to be potato boats. (Those poor things are doomed - that's 2 meal plans in a row they've been bumped!) Wednesday was to be chicken pot pies and Thursday was lentil & rice pilaf.
Due to the extremely hot and humid weather and lack of on-time groceries, Tuesday ended up being Monday's Sausage Soup. It was a hit last time and just as yummy this time around. But it was so stinkin' hot in the house, no one *really* wanted to eat it. We choked it down!
Wednesday's "beat the heat" attempt was hard boiled eggs, corn on the cob, canned beans and hamsteak. The boys gobbled it up!
Thursday was hawt. It was about 40 celcius with the humidex. (About 104). Yick. So we made smoothies (bananas, strawberry yogurt, frozen pineapple/blueberries/raspberries and milk) and a chickpea nacho salad. (chickpeas, corn, cheddar and feta cheese, tomatoes, vinegar, oil and Epicure's nacho spice.)
Friday we stuck with crock pot baked beans and sausage. Happy anniversary, sweetheart - have some gassy beans!!
